Despite the small number of tables, people line up to try the Dan Dan Noodle here, and it is even listed in the Michelin Guide Bib Gourmand every year. Kumsan Noodle Factory, a restaurant specializing in Dan Dan Noodle by Chef Chang-Wook Jung, is a place that presents attractive Japanese-style Dan Dan Noodle by applying his own color to high-quality noodles that are pulled out every day.

In 2017, Chef Chang-Wook Jung, who used to offer a variety of dishes through Bistro Chaugi, opened Kumsan Noodle Factory, a Japanese-style Dan Dan Noodle restaurant that focused on only one menu.

Chef Chang-wook Jung, who is intolerant of gluten, chose Dan Dan Noodle for one reason, because he likes Dan Dan Noodle very much. One day when he visited Tokyo and ate Dan Dan Noodle, he felt that the food was so good that he felt it was a waste to eat it, and he fell in love with it as he felt it was more comfortable in his stomach compared to other flour foods.

How to cook:

1. Put the frozen sauce and meat garnish in boiling water and boil for 1 minute.
2. Put plenty of water in another pot and bring to boil, then cook the thawed raw noodles for about 2 minutes.
3. Do not rinse the cooked noodles in cold water, just drain the water and place them in a bowl.
4. Pour the sauce into the bowl containing the noodles, top with the garnish, and mix well with the chili oil and sesame oil.

Tip. Depending on your preference, add sesame seeds, shredded green onionsย and egg yolks to make it even more delicious.
